The main ingredient of California rolls is tobiko caviar. In Russia, it is not as common as in Japan. This is the caviar of fish from the flying fish family. You can often see green or black tobiko. To make the reddish-orange caviar green or black, natural dyes are used - wasabi and cuttlefish ink.
