Cookinero 11 Apr 2025

The main ingredient of California rolls is tobiko caviar. In Russia, it is not as common as in Japan. This is the caviar of fish from the flying fish family. You can often see green or black tobiko. To make the reddish-orange caviar green or black, natural dyes are used - wasabi and cuttlefish ink.

Place the filling in the middle - crab sticks mixed with cream cheese, cucumber, avocado and a small amount of caviar. Raise the mat a little and roll up tight rolls. Sprinkle the rice with tobiko caviar on top.

California Rolls - FAQ About Ingredients, Baking Time and Storage

Yes! Imitation crab can be replaced with cooked shrimp, real crab meat, smoked salmon, or even tofu for a vegetarian option.
Store California rolls in an airtight container for up to 24 hours. The rice hardens over time, so they’re best eaten fresh.
Yes! Use tamari instead of soy sauce for dipping, and ensure your crab sticks or other fillings are gluten-free certified.
Lightly wet your hands with water or vinegar before handling the rice—this reduces stickiness and makes spreading easier.
A clean kitchen towel or parchment paper can work in a pinch, though a mat provides the best grip for tight rolls.
Freezing isn’t recommended—the texture of the rice and fillings degrades. Enjoy them fresh or refrigerated briefly.
Double or triple the recipe, but roll multiple smaller batches to avoid overcrowding your workspace.
