
Prepare the rice. Place the grain in a saucepan and pour water over it. Once boiling, reduce the heat to low. Cover the saucepan with a lid and cook for another 15 minutes.

While the rice is cooking, make the dressing. Mix the rice vinegar heated in a saucepan with salt and sugar. Stir thoroughly until the crystals dissolve. Leave the rice for 10 minutes. After the rice has steeped, mix it with the still warm dressing.

Roll up the California rolls. Wrap the mat with cling film. Put a sheet of nori on top, glossy side down. Smooth the rice over the surface of the nori. Turn the roll blank over. Place the filling in the middle - crab sticks mixed with cream cheese, cucumber, avocado and a small amount of caviar. Raise the mat a little and roll up tight rolls. Sprinkle the rice with tobiko caviar on top.
