Pancakes with mascarpone and berries from Francesco Pistacchio

These are pancakes with berries stuffed with mascarpone cheese, with brandy, lemon and orange sauce. Francesco Pistacchio flambés a dish in front of a guest. Very spectacular!

Ingredients

Servings 1
  • 2 pancakes, baked according to your favorite recipe
  • 50 g of beer mascarpone
  • 120 g mixed fresh berries
  • 30 g sugar
  • 100 g orange juice
  • 20 ml lemon juice
  • 10 g butter
  • 10 ml brandy

Cooking

Step 1

Pour sugar into the pan, hold over medium heat for 1 minute. Add a piece of butter. When it's melted, carefully add the brandy, orange juice, and lemon juice. Let the mixture boil.

Step 2

When the sauce boils and thickens a little, put the pancakes into it one at a time. Let them soak up the sauce well.

Step 3

Remove the pancakes from the sauce, spread the mascarpone evenly over them and fold over so that the cheese is inside. Put berries on pancakes, pour over the rest of the sauce.
