How to cook Paratha, Indian spiced bread
Step 1
1. Wash cilantro, dry and finely chop. Mix flour, semolina and salt in a bowl; add cilantro and pepper mixture. Carefully pour in vegetable oil and mix. 2. Pour fresh ginger with water, mix. Pour the ginger water in small portions into the dough and knead until the dough no longer sticks to your hands. 3. Remove the dough from the bowl onto a floured work surface. Knead 10 min. Then roll the dough into a ball, cover with a damp towel and leave for 30 minutes. 4. Divide the dough into 8 equal parts, roll each into a small ball, cover with a towel. Melt the butter in a saucepan or microwave. 5. Roll out one ball into a circle with a diameter of 15 cm. Lubricate it over the entire surface with 1 tsp. melted butter. Fold the circle three times so that you get a long rectangle, and brush again with oil. 6. Fold three times again - you should get a square. Roll it out so that each side is about 15 cm long. Roll out and fold the rest of the loaves in the same way. 7. Heat up the pan. Fry each paratha for 30 seconds, then drizzle with oil and flip. Fry 15 sec. Flip the paratha 4 more times, frying for 15 seconds. on each side without adding oil. Prepare the rest of the parathas in the same way.
