How to cook Chocolate truffles with ginger and orange juice
Step 1
In a water bath, melt 4 tbsp. l. cocoa butter and 3 tbsp. l. refined coconut oil, add 4 tbsp. l. honey and mix well with a whisk.
Step 2
Next, add 60 g of cocoa powder, 4 tbsp. l. freshly squeezed orange juice, 1 tsp. grated on the finest grater of ginger root and 1/2 tsp. sea salt flakes. Beat the mass with a mixer for about two minutes, you should get a mass that looks like a thick chocolate ganache.
Step 3
We cover the bowl with cling film and send it to the freezer for 20 minutes. If after 20 minutes the mass is still watery, put it back in the freezer.
Step 4
We take out a bowl, take a mass with a teaspoon and quickly roll up the ball, roll the finished ball in cocoa powder. Keep refrigerated.
