Bread of the Three Sisters
"Bread of the Three Sisters" is a popular Italian bread that got its name from the three ingredients that are added to the dough: rice, lentils and wheat. According to the classic recipe, steamed wheat grains are placed in the dough. We have replaced them with a more affordable product - wheat groats, which can be bought in large chain stores.
How to cook Bread of the Three Sisters
Step 1
Prepare steam. In a saucepan, lightly heat the apple juice along with 100 ml of water. Pour into a bowl, add honey, then yeast. Whisk with a whisk until the yeast is completely dissolved. Add flour and mix thoroughly. Cover and leave for 1 hour in a warm place. Then knead the dough again and leave for another hour.
Step 2
Meanwhile, prepare the grains. Lentils and rice pour 200 ml of water, bring to a boil, remove from heat, cover and leave for 1.5 hours.
Step 3
Pour warm water, apple juice and 2 tbsp into the prepared dough in a thin stream. l. oils. Mix. Add steamed rice and lentils, wheat groats, salt, finely chopped greens and both types of flour. Pour over 1 tbsp. l. oil, cover with cling film and leave for 10 minutes.
Step 4
Lubricate the work surface with 3 tbsp. l. oil, put the dough and quickly, for 30 seconds, knead it. Transfer the dough to a bowl, cover and leave for 15 minutes. Spray the work surface again with oil and knead the dough again for 30 seconds, cover it and let it rest for 30 minutes. Give the dough the shape of a rectangle 30x20 cm. Pull the short side of the rectangle to the center, press; do the same with the other short side. Fold the resulting rectangle 2 more times. Wrap the dough in a towel generously sprinkled with flour and leave for 2 hours in a warm place.
Step 5
Preheat the oven to 220 C. Sprinkle a baking sheet with flour, put the dough on it. Make deep diagonal cuts on the bread. Bake 45 min. Serve warm.
