Herring, Forshmak

Forshmak with toast

Ingredients

Servings 6-8
  • 2 shallots
  • a pinch of salt
  • 1/2 tsp ground black pepper
  • 3 tsp apple cider vinegar
  • 1 small sour apple
  • 500 g salted herring fillet
  • 2 eggs
  • 4 tbsp vegetable oil
  • 2 tsp mustard
  • 1/2 tsp. Sahara
  • 3 tbsp sour cream with a fat content of 25-30%
  • 6-8 slices of wheat bread, preferably with whole grain flour
  • chives for serving

Cooking

Step 1

Peel shallots, cut into 4 parts and chop in a blender in pulse mode. Transfer to a large glass bowl and season with salt, pepper and apple cider vinegar.

Step 2

Peel the apple and cut into cubes with a side of 2 mm, add to the bowl with onions.

Step 3

Cut the herring fillet as small as possible, mix with onions and apples. Leave for 15 min.

Step 4

Hard-boil eggs, cool, separate into protein and yolk. Protein cut into small cubes and mix with the rest of the ingredients. Mash the yolks with vegetable oil and half of the mustard, transfer to a bowl and stir the minced meat vigorously. Check for salt and pepper, season to taste if necessary.

Step 5

Mix sour cream with remaining mustard. Dry the slices of bread in a toaster or in the oven. Lubricate with sour cream sauce, put minced meat in a slide and garnish with chives.
