Bright and light summer salad with turkey and broccoli

I want to share with you a recipe for a delicious summer salad with turkey, which, thanks to its bright and healthy ingredients, will charge you with energy, positive energy and, of course, vitamins!

Ingredients

Servings 3
  • turkey fillet 300 g
  • broccoli 400 g
  • Oakleef salad 300 g
  • fresh carrots 1 g
  • cherry tomatoes 250 g
  • sweet corn 150 g
  • olives 150 g
  • sunflower seeds 2 tbsp
  • Dijon mustard 3 tbsp
  • olive oil 3 tbsp
  • soy sauce 3 tbsp
  • juice of half a lemon 3 tbsp.
  • ground black pepper pinch(s)
  • pinch(s) of salt
  • honey 3 tbsp.
  • garlic 1 pc.

Cooking

Step 1

Separate a part of the turkey fillet equal to 300 g, rinse thoroughly in cold water, dry with paper towels. Cut into large enough pieces (I got 4 pieces).

Step 2

Prepare the turkey marinade: Mix 6 tablespoons of soy sauce, 1.5-2 tablespoons of honey, 2 tablespoons of Dijon mustard, a pinch of curry and a pinch of salt. Mix everything thoroughly and bring the marinade to a homogeneous state.

Step 3

Place the prepared pieces of turkey in the prepared marinade, cover with a lid and marinate in the refrigerator (preferably longer, for 3 hours).

Step 4

When our turkey is well marinated, place it in a baking dish, carefully covering it with foil. Then we place the dish in an oven preheated to 180 ° C for 25 minutes. After 25 minutes, remove the foil from above and bake the turkey until cooked (we check the meat with small cuts with a knife, the main thing is not to overdry the beautiful fillet).

Step 5

While the fillet is being prepared, boil the broccoli: throw frozen broccoli florets into boiling water for 1.5-2 minutes, then immediately remove them and throw them into a colander. Broccoli should be bright and crispy, the main thing is not to overcook and spoil this wonderful product!

Step 6

We cut the finished slightly cooled baked turkey fillet: one part into small strips, which we will mix with the rest of the salad ingredients, and the other part into thin slices, which we will place along the edge of the plate for beautiful presentation and at the same time as a separate, but very tasty part of our dishes.

Step 7

Cut the carrot into thin circles.

Step 8

Cut cherry tomatoes in half.

Step 9

Wash lettuce in cold water, dry thoroughly with paper towels and tear with your hands into smaller pieces. Our salad ingredients are ready, it remains to prepare the dressing.

Step 10

For salad dressing, combine 2 tablespoons olive oil, juice of half a lemon, 1.5-2 tablespoons Dijon mustard, crushed garlic clove, a pinch of ground black pepper. Mix thoroughly, the prepared sauce should be as homogeneous as possible!

Step 11

We fill our salad with prepared sauce, sprinkle with sunflower seeds on top.

Step 12

We serve the dish and invite relatives and loved ones to the table, our salad is ready!
