Description

Ordinary squash pancakes can be diversified by adding incredibly healthy and tasty quinoa to the dough. Thus, pancakes will become more satisfying, tastier and healthier.

Cooking

Step 1

Soak quinoa overnight in plenty of cold water. This is how we get rid of bitterness.

Step 2

Cook quinoa according to package instructions. Cool down.

Step 3

Rub the zucchini on a medium grater, squeeze out the juice well.

Step 4

To the zucchini add the egg, boiled quinoa, grated feta cheese, flour and pepper. Salt may not be needed depending on how salty your feta is.

Step 5

Heat the oil in a frying pan and fry the pancakes over medium heat.

Step 6

Serve hot with sour cream or low-fat thick yogurt
