Description

Charlotte with apples and pears can add variety to a series of similar ones that are traditionally prepared only with apples. It will seem strange to you, but our version is really different from the classic one! Pears not only add a special, honey-sweet note to the taste of charlotte, but also make its texture more moist and tender. Such a cake is especially good in the company with a glass of good cool milk or even low-fat cream (unless, of course, you are not particularly worried about your figure). In general, charlotte with apples and pears should definitely be cooked, especially since this occupation is simple, untroubled, and therefore very pleasant.

Cooking

Step 1

Charlotte with apples and pears

Prepare pears and apples for charlotte. Wash the fruits and clean. Cut each in half and remove the cores with seeds. Cut the pulp into medium-sized cubes.

Place chopped pears and apples in a bowl. Drizzle with lemon juice, season with ground cinnamon and nutmeg. Stir and leave until use in a cool place.

Prepare dough for charlotte. Separate the whites from the yolks and refrigerate. Beat the yolks with a mixer with sugar and vanilla extract until a fluffy mass of a homogeneous consistency is obtained. Beat the chilled proteins with a mixer until sharp peaks.

Sift the flour with salt onto the yolk mass and mix. Then quickly fold in small portions into the yolk-flour mixture. Charlotte dough is ready.

Heat the oven to 180°C. Grease a mold with a diameter of 24-26 cm with butter. Add pears and apples with spices and lemon juice to the charlotte dough. Mix quickly and pour into prepared pan. Bake for 40-45 minutes. Then take it out of the oven and let it cool down a bit. Transfer the charlotte with apples and pears to a plate.

flour - 200 g
salt - on the tip of a knife
butter - 10 g
