Step 1
We cook the broth. My ribs, cut into separate ribs, fill with water, put the pan on a strong fire and wait for it to boil. As soon as the foam begins to stand out - remove it with a slotted spoon. When it boils - cover with a lid, turn the heat to below medium, and cook the broth at a slow boil for about an hour and a half. When the broth is ready, take out the ribs, you can strain the broth.
Step 2
Heat the broth again to a boil and put the potatoes cut into cubes into it. Cook for 10 minutes. Next, add cherry tomatoes cut in half. At the same time, we chop the cabbage, add to the potatoes, sauerkraut and finely chopped chili pepper are also added there. We cook.
Step 3
At the same time, cut the onion into small cubes, three carrots on a coarse grater. In a small amount of vegetable oil, fry the vegetables until golden brown, transfer the fire to the "below medium" level.
Step 4
Pour about a ladle of broth into a cup, add tomato paste there - mix. Transfer the tomato mixture to a frying pan and simmer over low heat for 10 minutes.
Step 5
Add the roast to the soup, add finely chopped garlic and a couple of bay leaves. Cook for another 10 minutes. At the very end, finely chop the dill, sprinkle on top.
Step 6
Return the ribs to the soup. Turn off the heat and, without removing it from the burner, let the soup brew for at least half an hour. Shchi becomes much tastier the next day.
Step 7
Pancakes. Usually I use meat from boiling broth, in this case I had a piece of meat boiled earlier. The filling is done like this: meat is scrolled through a meat grinder. We heat the butter in a pan (we don’t get greedy - the more butter, the juicier the filling, but you don’t need to overdo it), cut 1 large onion or a couple of medium ones into small cubes, fry in butter until light golden. There - scrolled meat, salt and pepper, mix and warm. We do not fry for a long time. The filling should not be dry.
Step 8
We mix boiling water with milk in one container, add eggs, salt, sugar, beat with a mixer. We begin to add flour, without stopping whipping the dough, at the end baking powder and vegetable oil 4-5 tbsp. l. We fry pancakes in a pan, before the first pancake, grease with oil, then it is not necessary. We stuff ready-made pancakes with meat - it's ready!
