Chicken tabaka from Mikhail Turetsky
The famous Russian showman, conductor and producer Mikhail Turetsky cooked chicken tabaka according to a special recipe in the kitchen of Gastronom. Ingredients
Servings 2–4- 2 chickens weighing 500–700 g each
- freshly ground black pepper
- salt to taste
- pita bread for serving
- 4 tomatoes
- 4 cucumbers
- 1-2 sweet red onions
- 2 sprigs of basil
- watercress sprouts
- 1 green chili
- 2 garlic cloves
- 3-4 stalks of green onions
- 2-3 sprigs of parsley
- zest of 1 lemon
- juice of 1 lemon
- olive oil
Cooking
Step 1
Cut the chickens in half along the breast, open and lightly beat, salt and pepper, brush with oil.
Step 2
Fry in a grill pan on both sides, pressing down on top and setting the weight, until golden brown on both sides. Transfer the chickens to a baking sheet and roast until tender at 200°C in the oven.
Step 3
For the sauce, chop the green chili, garlic, green onion, parsley. Place in a blender glass, add zest and juice of 1 lemon, salt, pepper and olive oil. Beat until the consistency of not quite homogeneous sauce.
Step 4
For salad, randomly chop tomatoes, cucumbers, sweet red onions, leaves of 2 sprigs of basil, mix. Drizzle with olive oil, salt and pepper, add watercress sprouts. Serve chicken tabaka with sauce and salad, on pita bread.
