Watermelon tataki

A light summer dish with an unexpected taste of watermelon and spicy caramel.

Ingredients

  • cold watermelon 150 g
  • Swiss chard 20 g
  • frieze 5 g
  • olive oil 3 ml
  • sous ponzu 5 g
  • sugar 100 g
  • green peppercorns 10 g
  • coriander seeds 10 g

Step 1

Prepare spicy caramel. Melt the sugar in a skillet over very low heat. At this time, crush the coriander and green pepper in a mortar to make large crumbs. Add pepper and coriander to melted sugar, mix. Pour caramel on parchment in a thin layer, leave to harden. Then beat the mixture in a mortar until crumbly.

Step 2

Cut cold watermelon into slices, pour caramel into slices in a thin layer (1-2 mm). Scorch with a burner until a small light brown crust appears (5-10 seconds). Put lettuce leaves and slices of seared watermelon with caramel on a plate.
