Vegetable fajitas

Ingredients

  • Onion - 30 gr
  • Garlic - 5 gr
  • Bell pepper green, yellow and red - 50 gr
  • Zucchini - 40 gr
  • Eggplant - 40 gr
  • Tomatoes - 40 gr
  • Canned corn - 20 gr
  • Pine nuts - 10 gr
  • Cilantro - 3 gr
  • Olive oil - 20 gr
  • Canned tomatoes in their own juice - 60 gr
  • Salt - 1 gr
  • Pepper - 1 gr

Cooking

Step 1

Cut all vegetables into slices.

Step 2

Fry onion and garlic in oil. Add zucchini, eggplant and pepper. Stir and add tomatoes and canned corn. Add salt and pepper.

Step 3

Add canned tomatoes with juice and fry for 2-3 minutes. To serve, sprinkle with pine nuts and cilantro.
