Vegetable fajitas
Ingredients
Servings 1- Onion - 30 gr
- Garlic - 5 gr
- Bell pepper green, yellow and red - 50 gr
- Zucchini - 40 gr
- Eggplant - 40 gr
- Tomatoes - 40 gr
- Canned corn - 20 gr
- Pine nuts - 10 gr
- Cilantro - 3 gr
- Olive oil - 20 gr
- Canned tomatoes in their own juice - 60 gr
- Salt - 1 gr
- Pepper - 1 gr
Cooking
Step 1
Cut all vegetables into slices.
Step 2
Fry onion and garlic in oil. Add zucchini, eggplant and pepper. Stir and add tomatoes and canned corn. Add salt and pepper.
Step 3
Add canned tomatoes with juice and fry for 2-3 minutes. To serve, sprinkle with pine nuts and cilantro.
