Turkey kufta
Ingredients
Servings 4- 500 g ground turkey
- 1 large zucchini
- 2 green onion shoots
- 1 hot red pepper or to taste
- 50 g shelled pistachios
- 3 sprigs of cilantro
- 3 sprigs of parsley
- 3 sprigs of mint
- ¼ tsp cumin seeds
- 1 egg
- ½ tsp. year
- a few sprigs of fresh thyme
Cooking
Step 1
Grate the zucchini, finely chop the pepper, green onion and herbs, chop the pistachios with a knife.
Step 2
Dry the cumin in a dry frying pan.
Step 3
Lightly beat the egg. Combine ground beef, egg, zucchini, peppers, herbs, and most of the pistachios in a large bowl (reserve some for garnish). Season with salt and cumin seeds.
Step 4
With your hands soaked in cold water, shape the minced meat into balls the size of a chicken egg. Spread on a tray and refrigerate for at least 30 minutes. Thread 2 balls onto skewers.
Step 5
Light the coals, set the grate and heat properly. Oil the grate, arrange the skewers and cook, turning often, 12-15 minutes, until cooked through. Sprinkle with pistachios.
