Turkey dumplings
Turkey dumplings are suitable for those who are trying to follow the canons of a proper, balanced diet. Of course, they are made from dough, but it is so thin that you can definitely afford at least a small portion. But there are simply no questions about the filling of dumplings: it includes juicy pulp from the thighs of a turkey, onions and spices. Nothing extra, high-calorie, fatty! Using ready-made high-quality dough greatly simplifies the task and makes the process of creating delicious turkey dumplings quick, easy and enjoyable.
Ingredients
Servings 150-200 pcs.- Dumpling dough , kneaded from 500 g of flour
- 1 kg turkey thigh meat
- 2 medium onions
- 8 g of salt
- 1/2 tsp black pepper
- 2 bay leaves
- 2 tsp with a heap of salt
- 10 black peppercorns
- 2 garlic cloves
- fresh coarsely ground black pepper

Cooking
Step 1
Knead the dough for turkey dumplings. Wrap in cling film and leave on the counter for 30 minutes.
Step 2
Clean the turkey meat from films and connective tissues and cut into cubes of about 2x2 cm. Spread them on a tray and put in the freezer for 15-20 minutes. The meat will freeze slightly, and it will be more convenient to roll it into minced meat.
Step 3
Peel the onion for stuffing dumplings with turkey and cut into 4 parts.
Step 4
Pass the turkey and onion through the meat grinder twice: first through a grate with large holes, then with small ones. Season the minced meat with salt and pepper and mix thoroughly. If you have a stand mixer, install a flat attachment (shovel) and knead the minced meat for 3-5 minutes. The finished stuffing will be shiny and uniform. Cover the bowl with cling film and refrigerate for 30 minutes.
Step 5
Cut off a small piece of dough for dumplings and form a roll with a diameter of 2 cm. Cut it into pieces 1 cm long. Fold the pieces of dough into a hill of flour. Flatten each piece of dough into a disc, then roll into a thin circle.
Step 6
Place a teaspoon of turkey filling in the center of each tortilla and seal the edges of the pastry. Lay the finished dumplings in rows on a board dusted with flour. Put dumplings intended for freezing on a tray that will fit in the freezer.
Step 7
Boil in a large saucepan with salt, bay leaf, black peppercorns and garlic cloves. Lower a portion of the dumplings and cook for 2-3 minutes after the dumplings float to the surface. Serve the dumplings hot.
