Tomatoes and strawberries with Thai style dressing

Dressing plays a major role in this salad. Tomatoes are also required, but strawberries can be replaced with peaches, apricots, plums or currants.

Ingredients

Servings 6
  • 4-5 ripe Uzbek tomatoes
  • 200 g strawberries
  • 1 red Crimean onion
  • salt
  • fried cheese for serving, optional
  • lime zest and freshly ground black pepper
  • 100 ml vegetable oil
  • 2 kaffir lime leaves
  • 1 tsp tom yum pasta
  • 1 tsp lime juice and fish sauce
  • 0.5 tsp powdered sugar

Cooking

Step 1

For dressing, remove the stalk and central “vein” from the lime leaves, finely chop the rest.

Step 2

Put the chopped leaves in a blender, pour in the oil, grind until smooth. Add all other dressing ingredients and whisk again.

Step 3

Peel the onion, cut into half-feathers, put in ice-cold salted water for 15 minutes.

Step 4

Remove the stalks from the strawberries, cut the berries into bite-sized pieces. Cut the tomatoes into large slices.

Step 5

Mix tomatoes, strawberries and dried onions, pour dressing, mix, sprinkle with zest and black pepper, serve immediately (if desired, with fried cheese such as halloumi or suluguni).
