Salad with shrimps, arugula and parmesan
Shrimp and arugula salad is a dish that is not only delicious, but also looks very sophisticated. Arugula goes well with cherry tomatoes, avocados and other vegetables, as well as seafood.
Ingredients
Servings 2- shrimp (peeled) - 150 g
- tomatoes (cherry) - 200-250 g
- sweet pepper - 1 pc. (average)
- pitted olives - 15-20 pcs.
- arugula - 1 bunch
- Parmesan cheese - 60-80 g
- pine nuts - 1 tbsp. l.
- vegetable oil - 1.5-2 tbsp. l.
- olive oil - 2-3 tbsp. l.
- sol - 0.5 h. l.
- ground black pepper - 0.25 tsp
- lemon juice - 1-2 tbsp. l.
Cooking
Step 1
Clean the shrimp. Put on a frying pan heated with vegetable oil, and fry on both sides (only 5-7 minutes), sprinkle with lemon juice during frying.
Step 2
Cut sweet pepper into strips. Cut olives into 4 pieces. Cut cherry tomatoes in half. Cheese grate on a coarse grater. Tear the arugula with your hands.
Step 3
Combine all ingredients, add pine nuts, pepper and salt. Fill with olive oil.
