Salad of zucchini, carrots and beets with spicy dressing

This salad contains vegetables of various colors, and dressing here is yogurt with chili peppers.

Ingredients

Servings 4
  • chili pepper - 1/2 pc.
  • garlic - 1 tooth.
  • parsley - 1 bunch
  • red wine vinegar - 2 tbsp.
  • natural yogurt - 3 tbsp.
  • young zucchini - 1 pc.
  • carrots - 2 pcs.
  • beets in cubes - 1 PC.
  • leaf lettuce - 1 pc
  • salt pepper
  • olive oil - 2 tbsp.

Cooking

Step 1

For dressing in a blender bowl add: chili, garlic, parsley, vinegar, yogurt, salt, pepper. Pour olive oil and grind into a homogeneous mass.

Step 2

Clean the zucchini and carrots, grate. This can be done very quickly using a food processor. Rinse lettuce, dry and tear into a salad bowl with your hands. Arrange vegetables over salad; drizzle with dressing. Enjoy your meal!
