Roast pork salad

Ingredients

Servings 4-6
  • 400 g roast pork (ham or lean neck)
  • 1 medium ripe avocado
  • 2 medium pickled cucumbers
  • 10 sun-dried tomato halves
  • 1 small bunch greens (cilantro and green onion)
  • 2–3 tbsp. l. mayonnaise
  • 1 tsp prepared creamy horseradish
  • 1 tsp spicy mustard
  • juice of half a lemon
  • salt, freshly ground black and red hot pepper

Cooking

Step 1

Cut the pork into small pieces. Sun-dried tomatoes - stripes. If the cucumbers have a tough skin, peel it, cut the flesh into small cubes.

Step 2

Remove the pit and peel from the avocado. Cut the pulp into cubes, sprinkle with lemon juice. Chop green onions and cilantro.

Step 3

For dressing, mix mayonnaise, horseradish and mustard. Toss pork with dressing, add herbs, cucumbers and avocados. Season with salt and pepper and let steep 15 minutes. and serve.
