Quinoa Tabbouleh

The fact that the tabbouleh is made from quinoa rather than couscous makes this dish even more healthy. Quinoa is high in protein and is ideal for growing bodies, active people and vegetarians. I added baked peppers, fresh cucumber, herbs to this salad, seasoned with olive oil and lemon. It can be served as a separate dish or as a side dish to baked meat or fish.

Ingredients

Servings 2-4
  • 500 g boiled red quinoa
  • a quarter each of red and yellow sweet pepper
  • 1 medium tomato
  • 1 small cucumber
  • a quarter of a red onion
  • a quarter of a lemon
  • 25 g sun-dried tomatoes in oil
  • 100 ml of olive oil
  • half a small bunch of mint, parsley and cilantro
  • sea salt
