Potato salad with salted cucumbers and herring

Ingredients

Servings 4
  • 115 g herring in oil
  • 4 small young potatoes
  • 2 hard boiled quail eggs
  • 1 bunch of sorrel
  • 2-3 sprigs of dill
  • 2-3 sprigs of parsley
  • 2-3 sprigs of cilantro
  • 1 onion
  • 2 salted cucumbers
  • 1 tsp mustard
  • vegetable oil
  • pepper

Cooking

Step 1

Wash the potatoes and boil in their skins until tender. Let cool, then peel and cut into small pieces.

Step 2

Peel the onion and cut into rings. Mix mustard with 1 tbsp. l. vegetable oil and pepper. Season potatoes with onions, mix and set aside. Wash sorrel and herbs, dry and chop.

Step 3

Cucumbers cut into cubes, eggs - circles. Add cucumbers, eggs, herbs and pieces of herring to potatoes with onions, mix. Drizzle with vegetable oil.
