Wasabi, Pig tongue

Pork tongue with sweet Wasabi sauce

Ingredients

  • lu shi broth - 100 ml
  • pork tongue - 150 g
  • mustard powder Wasabi - 10 g
  • lemon - 40 g
  • light haiten sauce - 5 g
  • raspberry vinegar - 7 ml
  • mayonnaise - 15 g
  • honey - 10 g
  • condensed milk - 10 g
  • olive oil - 10 ml
  • greens - 5 g
  • lemon peel - 5 g
  • Chinese vodka - 25 ml
  • fresh ginger - 10 g
  • fish sauce - 20 g
  • garlic - 3 g

Cooking

Step 1

Boil the tongue until tender and marinate for 15 minutes. For marinade: mix honey (5 g), zest, vodka, fish sauce, garlic, grated ginger root, soy sauce.

Step 2

Cut into slices. Serve with sauce. For sauce: mix condensed milk, lemon, honey, vinegar, finely chopped greens, olive oil, sauce, broth, wasabi powder
