Piglet with applesauce and marshmallow

Ingredients

  • pork - 150 g
  • barbecue sauce - 20 g
  • honey - 30 g
  • chili - 10 g
  • vegetable broth - 30 ml
  • Polba - 100 g
  • pickled apple
  • sugar syrup
  • trimoline sugar - 160 g
  • apple puree - 70 g
  • sugar - 700 g
  • green dye
  • gelatin - 35 g

Cooking

Step 1

Marinate the pork in a mixture of BBQ sauce, chili peppers and broth for 3 hours. Bake in the oven at 180C for 35 minutes.

Step 2

Marshmallow: mix sugar with applesauce and beat in a mixer. In a saucepan, mix 60 sugar, apple syrup and water. Cook up to 130 degrees. Pour hot syrup into whipped apple mass. Add gelatin and beat until cold.

Step 3

For garnish: Spelled 60 g cook until tender in 200 ml of water. Add butter and salt to taste.

Step 4

Arrange the pork and spelt on a platter. Add marshmallow next to it. Decorate with watercress.
