Pasta with zucchini and mackerel
The dish with its sauce resembles the well-known carbonara pasta, only with zucchini and mackerel.
Ingredients
Servings 4- spaghetti (or other pasta) 300 g
- medium zucchini 1 pc.
- onion 1 pc.
- rosemary 2 sprigs
- mackerel in oil (or smoked) 130 g
- eggs 2 pcs.
- milk 100 ml
- Parmesan 30 g
- lemon peel
- salt pepper
- olive oil
Cooking
Step 1
Cook pasta according to instructions until al dente. Save some water from cooking.
Step 2
If the zucchini is not young, then peel and remove the loose core with seeds. Cut the pulp into cubes. Finely chop the onion.
Step 3
Heat a little oil in a large frying pan, fry the onion, add the zucchini. Season, add rosemary leaves.
Step 4
Cut the fish into pieces, add to the pan.
Step 5
For sauce, beat eggs with milk, add grated parmesan.
Step 6
Transfer the spaghetti to the pan, add the sauce and water from cooking pasta. Cook a little more while stirring.
Step 7
Sprinkle the finished dish with lemon zest. Enjoy your meal!
