Ossobuco with bulgur and pumpkin
Ossobucco is a piece of beef shank that is stewed for a long time with vegetables and tomato. Served on bones.
Ingredients
Servings 5-6- 2 kg beef shank
- 200 g onion
- 200 g celery (stalks)
- 20 g of carrots
- 2 garlic cloves
- 500 ml dry white wine
- 250 ml chicken broth
- 250 g skinless tomatoes in their own juice
- 50 g parsley to taste
- 50 g wheat flour
- 30 g butter
- 2 Art. l. olive oil
- 300 g pumpkin
- 300 g of bulgur
Cooking
Step 1
Onions, celery, carrots cut into small cubes, pass in butter, add tomatoes, wine, broth. Cook the sauce for 15-20 minutes over low heat. After that, the sauce is set aside.
Step 2
Salt and pepper the meat to taste. Dip in flour and fry in olive oil on each side until golden brown. We spread the meat in a deep saucepan, pour the sauce prepared earlier, cover with a lid and put it in the oven for 2 hours. cook at 160'.
Step 3
Cut the pumpkin into cubes, boil for 2 minutes in salted water, set aside. Cook bulgur until tender. Mix pumpkin with bulgur, add parsley and fry everything in olive oil for 2 minutes.
Step 4
When serving, first lay out the bulgur and pumpkin, and in the center - a piece of meat.
