Olivier with smoked beef and lettuce
Another Olivier salad recipe - now with smoked beef for a richer meat taste. We serve it on a flat long plate and decorate with an egg and spicy green butter.
Ingredients
Servings 1- smoked beef - 50 g
- green peas - 20 g
- pickled cucumbers - 30 g
- fresh cucumbers - 30 g
- carrots - 30 g
- potatoes - 30 g
- egg - 1 pc.
- homemade mayonnaise - 40 g
- mix salad - 15 g
- olive oil - 30 g
- a mixture of dill and parsley - 20 g
- salt - 2 g
Cooking
Step 1
Cut boiled potatoes, carrots, fresh and pickled cucumbers, smoked beef into small cubes of equal size. Mix, salt and add green peas. Top with homemade mayonnaise.
Step 2
To prepare the oil in a blender, beat the olive oil with herbs until smooth. Let stand, from 2 hours. Strain.
Step 3
Put the prepared mixture on a rectangular plate, along the long side. Put a soft-boiled egg on top, cut into 4 parts. Garnish with lettuce leaves and drizzle with green oil.
