Okroshka of Matsons

Try the okroshka recipe from the Voronezh restaurant! To make the soup really healthy, they add matsoni instead of the usual kvass, and boiled tongue instead of sausage. Such okroshka will come out light and at the same time unusual.

Ingredients

Servings 1
  • boiled beef tongue 50 g
  • potatoes 1 pc
  • matzoni 100 ml
  • sparkling mineral water 200 ml
  • fresh cucumber 1 piece
  • radish 2-3 pcs
  • egg white 1
  • salt to taste
  • sibulet 2 stalks
  • dill for decoration

Cooking

Step 1

Thinly sliced boiled beef tongue

Step 2

Boil potatoes. Finely chop vegetables and herbs

Step 3

Mix matsoni and sparkling water

Step 4

Add to the matsoni mixed with water, vegetables, herbs and tongue

Step 5

Pepper and salt. Garnish with fresh dill when serving
