Mashed potatoes with apples and curry
Ingredients
Servings 6- 1 kg potatoes
- 3 large Granny Smith apples
- 250 ml soy cream
- 1 tsp curry powder
- allspice ground pepper
- salt and freshly ground black pepper
Cooking
Step 1
Peel potatoes for mashing, cut into 4-6 pieces, put in a saucepan, cover with boiling water and bring to a boil.
Step 2
Salt, add peeled and halved apples, cook until the potatoes are absolutely soft, 25-35 minutes. Drain the water.
Step 3
While the potatoes are cooking, heat the cream with 1 tsp. curry powder, allspice and black pepper to taste almost to a boil.
Step 4
Mash the potatoes while pouring in the hot cream mixture. Salt. Serve immediately.
