Pancakes, Zucchini fritters

Lush pancakes from zucchini with basil

Ingredients

Servings 4
  • 2-3 medium young zucchini
  • 2 onions (small)
  • 2 garlic cloves
  • 1 small bunch green basil
  • 1 cup flour
  • 2 eggs
  • 2-3 tbsp. l. fat sour cream
  • ½ tsp baking powder
  • olive oil
  • allspice
  • salt

Cooking

Step 1

Peel the onion and garlic, finely chop the garlic, fry in olive oil for about 7 minutes. Let cool.

Step 2

Grate the zucchini on a coarse grater, add salt, let stand for a while. Squeeze out the juice and transfer the zucchini to a large bowl. Finely chop the basil.

Step 3

Add fried onions with garlic, eggs, sour cream, baking powder to a bowl with zucchini and mix. Enter the flour in parts, there should be no lumps. Add salt, pepper and basil.

Step 4

Heat the olive oil in a frying pan and fry the pancakes on both sides until cooked through. Serve with sour cream or your favorite sauce.
