Lime and grapefruit jelly marmalade with berries

Ingredients

  • 3-4 raspberries
  • 4 blackberries
  • 6 blueberries
  • 2 strawberries
  • 1 lime
  • 2 g ground cinnamon
  • 4 g cane sugar
  • 40 g peeled orange segments
  • 40 g peeled grapefruit segments
  • 160 g freshly squeezed orange juice
  • 200 g freshly squeezed grapefruit juice
  • 60 g freshly squeezed lime juice
  • 40 g sugar
  • 6 g of agar-agar
  • 6 g gelatin

Cooking

Step 1

Prepare the jelly. Strain freshly squeezed juices through a sieve. Add granulated sugar, agar-agar and gelatin. Put on a slow fire and heat, stirring, until the agar-agar and gelatin are completely dissolved. Pour into a mold and refrigerate for 3-4 hours.

Step 2
