Lime and grapefruit jelly marmalade with berries
Ingredients
Servings 2- 3-4 raspberries
- 4 blackberries
- 6 blueberries
- 2 strawberries
- 1 lime
- 2 g ground cinnamon
- 4 g cane sugar
- 40 g peeled orange segments
- 40 g peeled grapefruit segments
- 160 g freshly squeezed orange juice
- 200 g freshly squeezed grapefruit juice
- 60 g freshly squeezed lime juice
- 40 g sugar
- 6 g of agar-agar
- 6 g gelatin
Cooking
Step 1
Prepare the jelly. Strain freshly squeezed juices through a sieve. Add granulated sugar, agar-agar and gelatin. Put on a slow fire and heat, stirring, until the agar-agar and gelatin are completely dissolved. Pour into a mold and refrigerate for 3-4 hours.
Step 2
Put the frozen jelly with a spoon on a plate in pieces. Cut the berries and arrange on the jelly. Sprinkle with cinnamon and sugar, arrange grapefruit and orange segments. Sprinkle the dish with finely grated lime zest.
