Salmon, Leek, Lime, Ceviche

Light salmon ceviche with leek

Ingredients

Servings 2 servings
  • 200 g very fresh salmon fillet
  • salt
  • sugar - 0.5 tsp.
  • 70 g leeks, white part only
  • juice of 5 limes
  • softened butter
  • a pinch of ground chili pepper

Cooking

Step 1

Mix lime juice, sugar and chilli. Add salt to taste.

Step 2

Wash the fish, dry it, cut into cubes with a side of 0.5 cm, pour the resulting mixture and place in the freezer for 15 minutes. Rinse the leek thoroughly, scald, cut into rings and lightly fry in butter for 1 minute, salt.

Step 3

Put the warm leek on a plate, put the fish on top. Drizzle with remaining marinating mixture.
