Irish salad
Ingredients
Servings 4- 250 g salad mix
- 2 medium cucumbers
- 250 g cherry tomatoes
- 200 g green beans or green peas
- 1 purple onion
- 4 boiled eggs
- 150 g cheddar cheese
- 125 ml mayonnaise
- 2 tbsp. l. apple cider vinegar
- 1 tsp. dried tarragon
- 1 tbsp Dijon mustard
- salt
- freshly ground black pepper
Cooking
Step 1
Mix mayonnaise, vinegar, mustard and tarragon in a small bowl, add 2-3 tsp. water.
Step 2
Boil green beans in salted boiling water and drain in a colander, pour over with cold water. Cut the onion into half rings, cucumbers and tomatoes into circles. Cut the eggs into 6-8 slices. Cut the cheese into thick strips. Place the salad mixture, vegetables, cheese and eggs in a salad bowl, pour dressing over and toss gently.
