Green salad with walnut crumble and feta

If you eat salads every day, then you know how difficult it can be to come up with a new option. Our recipe will help you find inspiration.

Ingredients

Servings 4–6
  • 1 large head of lettuce
  • 2 medium cucumbers
  • 1/2 cup green peas
  • 100 g feta
  • 2 tbsp. l. tahini
  • 2 Art. l. olive oil
  • 2 tbsp. l. apple cider vinegar
  • 1 st. l. Teddy bear
  • 1/2 tsp ground turmeric
  • salt, freshly ground black pepper
  • 1-2 handfuls of walnuts
  • 3 art. l. pumpkin seeds
  • 3 art. l. sunflower seeds
  • 2 tbsp. l. flax seed

Cooking

Step 1

Place all of the ingredients for the nut mixture in a blender and pulse until coarse crumbs.

Step 2

For dressing, mix olive oil with honey, vinegar, a pinch of salt and pepper. Add tahini and turmeric and stir well. Pour 2-3 tbsp. l. water to make a medium-thick dressing.

Step 3

Place the peas in boiling salted water and boil until tender, 5 minutes. Drain in a colander and rinse with cold water.

Step 4

Tear the lettuce leaves into medium pieces. Cucumbers cut into thin semicircles. Mix lettuce with cucumbers and peas, pour dressing over salad and sprinkle with nut crumbs. Crumble the feta with a fork and sprinkle over the salad before serving.
