  • back of lamb chilled - 600 g
  • salt - to taste
  • pepper - to taste
  • garlic - 5 cloves + 3 heads
  • cilantro - 1 bunch
  • parsley - 1 bunch
  • white wine - 100 ml
  • chicken broth - 100 ml
  • carrots - ½ kilogram
  • tomatoes in their own juice - 300 g
  • onion - 100 g
  • chili pepper - to taste
  • Tabasco sauce - to taste
  • buns - 4 pcs.
  • lettuce leaves - 4-6 pcs.
  • thin slices of tomato - a few pieces
  • pumpkin seeds - 20 g
  • vinegar - 1 tsp. l.

Cooking

Step 1

Marinate the back of the lamb with salt and pepper. Crush 5 cloves of garlic, rub the meat with them. Leave to marinate for 3-4 hours.

Step 2

Cut the back into 5-6 parts, put in a tray with high sides. There also add coarsely chopped carrots and onions.

Step 3

Add cilantro and parsley stalks, whole head of garlic, white wine and chicken broth.

Step 4

Knead the onion with your hands so that it gives juice, and the greens break, and bake under foil at 130 degrees for 3-4 hours. After baking, disassemble the lamb into fibers.

Step 5

Grate the tomatoes in their own juice, add to them 3 heads of finely chopped garlic, 100 g of finely chopped onion, cilantro, chili pepper, Tabasco to taste, salt and crushed black pepper. Stir, let the sauce brew for 10 minutes.

Step 6

At this time, heat the oil in a saucepan, add the lamb, sauce and fat left after roasting the lamb. After that, add tomato sauce to the same mass, bring to a boil and remove from heat. Mix again. Leave.

Step 7

Reheat 4 buns. Put half a tablespoon of tomato sauce on the top and bottom.

Step 8

Collect burgers. Put fresh lettuce, red onion, tomatoes on the bottom half. Put the stewed lamb on top, put fresh cilantro on top, sprinkle with pumpkin seeds. Close with the second half of the roll.
