Fried squid with inoque mushrooms with XO sauce

Ingredients

  • squid - 230 g
  • onion - 60 g
  • chili pepper - 50 g
  • ginger - 15 g
  • green onion - 40 g
  • celery stalk - 40 g
  • vegetable oil - 120 g
  • sugar - 30 g
  • sea salt - 1 g
  • dark haiten sauce - 50 g
  • white sesame - 5 g

Cooking

Step 1

Fry the peeled mini-squids in vegetable oil until caramelized with sugar.

Step 2

Add finely chopped garlic, pepper, ginger root, celery stalk, green onion, chili and sea salt. At the very end, season with Haiten sauce and sprinkle with sesame seeds.

Step 3

Serve on a banana leaf garnished with deep fried inoque mushrooms.
