Fried squid with inoque mushrooms with XO sauce
Ingredients
Servings 1- squid - 230 g
- onion - 60 g
- chili pepper - 50 g
- ginger - 15 g
- green onion - 40 g
- celery stalk - 40 g
- vegetable oil - 120 g
- sugar - 30 g
- sea salt - 1 g
- dark haiten sauce - 50 g
- white sesame - 5 g
Cooking
Step 1
Fry the peeled mini-squids in vegetable oil until caramelized with sugar.
Step 2
Add finely chopped garlic, pepper, ginger root, celery stalk, green onion, chili and sea salt. At the very end, season with Haiten sauce and sprinkle with sesame seeds.
Step 3
Serve on a banana leaf garnished with deep fried inoque mushrooms.
