English pudding "Spotted Dick" (Spotted Dick)

What can I say about the pudding itself ... it seems to me that this is an absolutely winter version. It is very sweet, dense, somewhat reminiscent of a Christmas cake with dried fruits, but with a more moist texture. By the way, it was quite possible to splash a drop of rum into it! I added a handful of my favorite dried cherries.

Ingredients

  • 120 g flour
  • 120g breadcrumbs (I grind white bread slices in a blender)
  • 120 g butter (largely grated)
  • 120 g sugar
  • 120 g dried apricots (chopped into pieces, the size of raisins)
  • 200 g raisins (take any, but with black it looks more impressive)
  • 1 egg
  • grated nutmeg - about 1/4 nut
  • 2 tbsp. l. grated fresh ginger root
  • peel of 1 orange
  • 140 g milk
  • a pinch of salt

Cooking

Step 1

All you have to do is mix all the ingredients. I did this in a blender, adding the breadcrumbs last.

Step 2

Put the dough in a greased form, cover with foil, it is best to tie a tourniquet so that water does not get inside. Place the mold in a bowl of water. Pour water up to 2/3 of the height of the mold. To cover with a lid. Bring to a boil over medium heat, then simmer over low heat for about three hours.

Step 3

Take out, turn the mold over, put the pudding on a plate.
