Dumplings with strawberries
Such dumplings are the same lazy dumplings, only they have more flour and, according to technology, they are not lazy at all.
Ingredients
Servings 4- 500 g full-fat cottage cheese
- 2 small eggs
- 120 g flour
- 20 g semolina
- 1.5 tsp cornstarch
- 300 g strawberries
- 150 g brown sugar
- 1 cinnamon stick
- 1 star anise
- 0.2 tsp baking powder
- salt
- butter for greasing
Cooking
Step 1
Put cottage cheese and eggs in a deep bowl, add salt and 2 tsp. sugar, beat with an immersion blender until smooth.
Step 2
Sift flour with starch and baking powder, add semolina. Continuing to beat the curd mass, gradually pour in the flour mixture (toward the end you will need to knead with your hands). You should have an elastic dough. Wrap it in cling film and refrigerate for 30-60 minutes.
Step 3
While the dough is standing, prepare the syrup: pour 3 tbsp. l. water, then add sugar and spices. Place over low heat, bring to a boil and simmer for 5 minutes. Remove from fire.
Step 4
Put a large pot of water on the fire, let it boil. Divide the dough into 16-18 equal parts. Remove stems from strawberries. Flatten a piece of dough into a cake, put a strawberry in the center and wrap it, pinching tightly and smoothing the seam.
Step 5
Salt the water, gently lower the dumplings into boiling water, bring to a boil again and cook over medium heat for 12-15 minutes. Take out the finished dumplings with a slotted spoon, letting the water drain each time. Transfer to a buttered dish, drizzle with syrup and serve with the remaining berries.
