Chicken wings with apricot chutney
Ingredients
Servings 4- 1 kg chicken wings
- wine vinegar - to taste
- 100 g of dried apricots
- For apricot chutney:
- For marinade:
- large lemon
- piece of ginger 10 cm long
- vegetable oil - 2 tbsp.
- mustard ready
- 1 small pod of red hot pepper
- salt, curry powder
- butter - 1 tsp
- garlic - 1 clove
- 50 g of honey
Cooking
Step 1
Make the marinade: Squeeze the juice from the lemon. Peel and grate the ginger on a fine grater. Mix honey, lemon juice, vegetable oil, mustard and ginger. Pour mixture over wings. After 10-15 min. fry on the grill (5-7 minutes on each side).
Step 2
Making the sauce: Boil dried apricots, discard in a colander. Save the decoction. Cut the fruit into small pieces and fry in butter for 5 minutes. Finely chop the hot pepper, peel the garlic and finely chop; add to dried apricots. Fry for 5 more minutes, cool. Make a puree using a blender. Add 2 tbsp. l. apricot broth, salt, curry and vinegar to taste.
