Chicken soup with melted cheese

Chicken soup with melted cheese is a very simple, homemade dish, but at the same time it is very popular. We cooked it in broth, and once thrifty housewives cooked it just on water, seasoning it with fried onions and carrots. In this case, melted cheese was just responsible for the richness of the dish. Of course, a lot depended on this product: the better it was, the tastier the soup turned out. Our version is more "rich"! Here and broth, and chicken fillet, and two whole types of processed cheese. All in all, this dish is definitely worth a try. Moreover, it will take no more than 40–50 minutes to cook chicken soup with melted cheese.

Ingredients

Servings 4
  • chicken broth - 800 ml
  • chicken fillet - 1 pc.
  • medium-sized bulbs - 2 pcs.
  • medium-sized carrots - 1 pc.
  • medium-sized potato tubers - 2 pcs.
  • vegetable oil - 2 tbsp. l.
  • processed cheese with onions - 1 pc. (100 g)
  • soft processed cheese with creamy taste - 90 g
  • salt - to taste
  • ground black pepper - to taste

Cooking

Step 1

Pour the chicken broth into a saucepan and bring to a boil over high heat. Put the chicken fillet and cook for 20 minutes after boiling again. Put the fillet on a plate.

Step 2

Peel the onion and chop finely. Wash and peel carrots and potatoes thoroughly. Cut carrots into short strips or grate on a coarse grater, potatoes - into small cubes.

Step 3

Heat vegetable oil in a large heavy bottomed saucepan. Put the onion with carrots and fry over low heat for 10 minutes. Pour chicken broth over vegetables, add potatoes and simmer until tender.

Step 4

Put all the cheese in the chicken soup and, stirring, cook over low heat. Salt and pepper to taste. Cut the chicken fillet into small cubes and put in the soup. Bring to a boil, salt and pepper.

Step 5

Ladle hot chicken soup with melted cheese into serving bowls. Finely chopped parsley, dill or fried onion rings can be added to each.
