Cooking

Step 1

Ganache is best made the day before use. Bring cream to a boil, remove from heat, add chopped chocolate. Let stand for a minute and mix well.

Step 2

Rub for several minutes until a homogeneous, smooth, shiny state.

Step 3

Immediately cover the cream with cling film. First straight on the cream, and then close the pan. Cool to room temperature and refrigerate for 8 hours. Take the cream out of the refrigerator 2 hours before use.

Step 4

Separate whites from yolks. Beat the yolks with sugar.

Step 5

Separately, beat the whites in a strong foam.

Step 6

Add the whites to the yolks and gently mix with a spatula (moving from top to bottom).

Step 7

Mix flour, cocoa and baking powder. Gradually add the sifted dry mixture to the eggs, gently mixing with a spatula. A little less flour may be required. The dough should not be very thick. Put in a greased form and bake in an oven preheated to 180 degrees for 40 minutes. Readiness to check with a wooden skewer. Transfer the finished cake to a cooling rack.

Step 8

Add sugar to defrosted cherries. Place over medium heat and cook for 5 minutes until thickened. Taste for sugar, if not enough, add more. It should be a sweet and sour syrup. Transfer to a sieve to glass the cherry.

Step 9

Beat the yolks with regular and vanilla sugar, add flour and a little milk, beat until smooth so that there are no lumps. Heat the rest of the milk, pour in a thin stream into the yolks, constantly stirring with a whisk. Pour back into saucepan. Cook over low heat, stirring all the time, until the cream thickens. Remove from heat, cool (sometimes stir so that there is no film).

Step 10

Separately beat soft butter and mascarpone. Add the cooled custard to the butter, beat. Add cream with butter in mascarpone, beat.

Step 11

Whip cream to soft peaks. Add to them the resulting mass.

Step 12

Mix well with a spatula until smooth.

Step 13

Cut the cooled cake into 3 parts. Soak the bottom cake with cherry syrup, cover with cream, lay out the cherry, cover again with cream. Cover with a second cake, soak, cover with cream. Saturate the third cake with syrup and put the soaked side down on the cream. Cake on top should be without cream. Remove the cake from the refrigerator.

Step 14

When the cream sets a little in the cold, remove the leaked cream with a cake spatula.

Step 15

Robocars. Mix butter, honey and sugar and melt in a water bath. Add eggs and sifted flour with baking powder. Mix the dough and put in the refrigerator for 30-50 minutes. Divide the cold dough into 2 parts. Roll out one part into a large rectangular layer (it will be convenient to cut out parts for robocars from it). Roll out the second part into several circles (for the sky). Roll out the dough thinly (it rises a little). Bake in an oven preheated to 180 * C for 5-7 minutes until golden brown.

Step 16

Mix chilled sour cream with powdered sugar and vanilla sugar.

Step 17

Cut the cooled rectangular cake into approximate parts for robocars. Spread each cake well with cream, collect figures and the sky (from round cakes). Remove to refrigerator.

Step 18

Let the cake and figurines brew in the refrigerator. Cut extra corners of the figurines, make recesses for the wheels so that they look like heroes. And cut off the excess from the sky.

Step 19

Spread the cake and figurines with at least 2 layers of ganache, covering completely so that the mastic does not come into contact with cakes and creams, otherwise it may leak. Go over the final layer with a hot cake spatula to remove any bumps.

Step 20

Mastic can be purchased. I have shock. She made it from marshmallows, white chocolate, lemon juice, butter, powdered sugar and starch. Dye the mastic in the desired colors with food coloring.

Step 21

For the cake, roll out the fondant into a large layer. Gently transfer onto the cake using a rolling pin or hands. Spread very carefully on the cake. First, cover all the figures with mastic, then cut and glue the details on the water. The figurines are held onto the cake with wooden skewers and water. At the end of the work on the cake and robocars, walk with a damp brush (this will remove the remaining powder and add shine).

Step 22

Cutaway cake.

Step 23

Roy in the cut.
