Cabbage and cucumber salad with mint

Cabbage and cucumber plus butter-mint dressing are good for breakfast and lunch. At dinner, there is also a place for such a refreshing salad. The dish goes well with roasted poultry and meat.

Ingredients

Servings 6
  • 3 medium sized cucumbers
  • 1 medium young cabbage
  • 8-10 pcs. olives
  • 1 st. l. red wine vinegar
  • 1 PC. red chili pepper
  • half a lemon
  • 50-70 ml of olive oil
  • 2-3 sprigs of mint
  • 3-4 young green onions

Cooking

Step 1

Chop cabbage and cucumbers into thin strips. Finely chop the green onion and chili pepper.

Step 2

Lightly crush the olives and season with vinegar.

Step 3

Prepare the butter mint dressing. To do this, mix the juice of half a lemon, olive oil and chopped mint leaves. Mix salad ingredients and dress.
