Berry salad with lemon and goat cheese
Ingredients
Servings 12 servings- For refueling:
- 1 cup cream with 20% fat
- 150 g soft goat cheese
- zest of 2 lemons
- lemon juice
- 1 cup raspberries, blackberries, blueberries
- 0.75 cup freshly squeezed orange juice
- 0.25 cup freshly squeezed lemon juice
- 1 cup finely chopped mint leaves
- 2 bunches of watercress
- 1 tsp maca
Cooking
Step 1
Place the goat cheese and cream in the bowl of a food processor, mix until smooth. Add zest, lemon juice and poppy seeds. Close with a film and refrigerate for 1 hour. Carefully sort the berries, rinse and dry. Put them in a deep bowl, add mint, orange and lemon juice, shake lightly. Arrange the berries in the center of a serving dish, arrange the washed, dried watercress leaves in a circle and drizzle with the dressing.
