Beet mix salad with arugula and pumpkin seeds

A truly delicious, healthy and light salad! The gastronomy of flavors is wonderful!

Ingredients

  • beets - 1 pc. boiled/baked
  • arugula -150
  • pumpkin seeds (pre-roasted) - 1 tsp
  • balsamic vinegar - 1 tbsp. l.
  • olive oil -1 tbsp. l.
  • green onion
  • cilantro sprigs - 30-40 g
  • garlic - 1 clove

Cooking

Step 1

Rinse the arugula leaves, dry with a paper towel, separate the long stems from the leaves. Put on a plate.

Step 2

Peel the boiled beets and cut into slices. Put on a "pillow" of arugula.

Step 3

Dressing: Combine olive oil, balsamic, minced garlic, salt (minimum) and pepper. Top with pumpkin seeds and green onions. Decorate with cilantro sprigs.
