Armenian Spas

Delicious warming soup based on matsun. In Armenia, it is often served hot right in a mug.

Ingredients

Servings 4
  • macun - 500 ml
  • sour cream - 4-5 tbsp. l.
  • Dzavar - 1/3 tbsp.
  • egg - 1 pc.
  • flour - 1 tbsp. l.
  • cold water - about 600 ml
  • salt - to taste
  • cilantro - a small bunch
  • mint - optional

Cooking

Step 1

Boil Dzavar in enough water for 30 minutes, until tender.

Step 2

Rub the egg with flour.

Step 3

In a saucepan with a thick bottom, mix matsun and sour cream, add the egg mass, mix until smooth, pour in cold water, mix again, add Dzavar, salt to taste.

Step 4

Place over medium heat and bring to a boil, stirring constantly. Then reduce the heat and cook for another 20 minutes, also stirring.

Step 5

Turn off the heat, add finely chopped cilantro (mint if desired). Serve hot. But you can do it in the cold.

Step 6

If desired, you can also fry 1 finely chopped onion in melted butter and add to the soup when serving.
