Zucchini rolls with different fillings
Zucchini makes delicious appetizer rolls. To do this, cut the zucchini into thin "ribbons" - slices - and spread with a variety of fillings based on cottage cheese or cream cheese with bright additives (greens, sun-dried tomatoes, spicy vegetables, spices, mushrooms, fried bacon, etc.). You will get a wonderful appetizer, suitable for both a homemade dinner and a festive table for a large company.
Ingredients
Servings 6- 8 small thin zucchini
- olive oil
- freshly ground black pepper
- salt
- 200 g creamy soft cheese
- 1 clove of garlic
- 5-7 sprigs of parsley
- 200 g fat cottage cheese
- 10 sun-dried tomatoes in oil
- 2 garlic cloves
Cooking
Step 1
Cut the zucchini lengthwise into 7-9 mm thick plates. Brush with olive oil, salt and sauté very quickly in a non-stick skillet just to soften the zucchini. Place cooked zucchini on paper towels.
Step 2
For the cheese filling, grind the peeled garlic with chopped parsley into a paste with an immersion blender, mix with cheese.
Step 3
For the curd filling, grind peeled garlic with chopped sun-dried tomatoes into a paste with an immersion blender, mix with curd, pepper.
Step 4
Lubricate each plate of zucchini with one of the fillings, roll into rolls and place vertically. Serve by letting it sit in the fridge for a bit.
