Vegetables in Chinese from Polina Osetinskaya

Ingredients

  • 2 eggplants
  • 1 each red, yellow and green sweet pepper
  • onion
  • 1–2 tbsp. l. vegetable oil
  • no more than 1 tsp. soy sauce
  • 1 tsp sesame seeds

Cooking

Step 1

Cut vegetables into cubes.

Step 2

Put the pan on high heat, add 1-2 tbsp. l. vegetable oil, as it should be warmed up.

Step 3

Fry eggplant first, 3 minutes, stirring constantly. Then add sweet pepper and onion, and fry all together for another 2 minutes.

Step 4

Then you need to add soy sauce, mix and cook for another 1-2 minutes. Sprinkle the finished dish with sesame seeds. You can cook this dish in a wok, if there is no wok - in a regular frying pan with a thin bottom.
