Tortilla with cheese, spinach and cashews

A recipe that I came up with myself. By chance. It’s just that, as it usually happens, the available products were collected in one dish, because no one wanted to go to the store. Such laziness is the engine of progress!

Ingredients

Servings 4
  • tortilla - 3 pcs.
  • spinach - 400 g
  • cheese - 250 g
  • onion - 1 pc.
  • cashew - 50 g
  • nutmeg
  • salt pepper
  • olive oil

Cooking

Step 1

1 medium-sized onion finely chopped and sautéed in olive oil. Spinach (you can chopped frozen, but then you need to defrost it in advance and squeeze out excess moisture), finely chop and add to the onion, simmer for 3-5 minutes. Cool down.

Step 2

Fry the cashews in a dry hot frying pan, stirring constantly.

Step 3

In a bowl, mix spinach and cheese with your hands. Add salt, pepper and ½ teaspoon ground nutmeg.

Step 4

Put the filling on half of each tortilla, close and fry on both sides in olive oil.

Step 5

Cut each tortilla into 3 equal segments.
