Salad with dandelion leaves

Salad with dandelion leaves and strawberries is a real summer dish. After all, it has so much taste, so many colors, with a lot of vitamins from seasonal products. And avocado, although not from our places, fits organically into the salad.

Ingredients

Servings 4
  • 150 g young dandelion leaves
  • 150 g strawberries
  • 1 large avocado
  • 2-3 medium cucumbers
  • 30 g walnuts or almonds
  • nut butter (almond or walnut)
  • juice and zest of half a lemon
  • balsamic vinegar or sauce
  • salt, freshly ground black pepper

Cooking

Step 1

Cut the cucumbers into medium slices, salt, sprinkle with lemon zest. Peel the avocado, cut it the same way as the cucumbers, pour over the lemon juice.

Step 2

Remove the stalks from the strawberries, cut the berries in half or quarters lengthwise. Tear the dandelion leaves with your hands.

Step 3

Mix all the prepared foods, season with olive oil, pepper, a little more salt, sprinkle with nuts.

Step 4

Divide among plates, drizzle with balsamic and serve.
