Ragout of new potatoes with salmon and zucchini
Ingredients
Servings 6- 800 g new potatoes
- 500 g skinless salmon fillet
- 2 small zucchini
- 2 red onions
- zest of 1 lemon
- olive oil
- salt
- freshly ground black pepper
- 200 g sour cream
- 2-3 tbsp. l. fuck
- small bunch of dill
- salt
- freshly ground black pepper
Cooking
Step 1
Cut the potatoes in half, put in a saucepan, cover with water and boil until tender. Then drain the water and dry the potatoes.
Step 2
For the sauce, mix chopped dill, sour cream, horseradish, salt and pepper.
Step 3
Cut the salmon into large cubes, sprinkle with salt and pepper, leave for 5 minutes.
Step 4
Cut the onion into half rings, zucchini into small cubes.
Step 5
Lightly fry the onion in olive oil, add the zucchini, fry for 2 minutes. Add potatoes and heat, stirring gently, 1-2 minutes.
Step 6
Add fish; cook, stirring, 4-5 minutes, until fish is done. Sprinkle with lemon zest and pepper and serve immediately with sauce.
